The name itself points to the kitchen’s dual heritage. Nakhon Luang draws on the ceremonial roots of Bangkok and the Lao term for a royal or central city, marking the meeting point of the two cultures behind the food.

“Thai food is not one flavor,” said Toui Phommalath, chef and co-owner of Nakhon Luang Thai Kitchen, who has cooked professionally for nearly 20 years, including in fine dining. “Our focus is on giving guests in Colorado Springs the range we grew up cooking, from Northern curry noodles to Isan salads, prepared the way it should taste.”

The menu runs across 15 sections and is organized to show that range rather than a single house style. Northern Thailand appears in two khao soi preparations, a curry noodle soup served with soft and crispy egg noodles, pickled mustard greens and green onion, offered both as Chiang Mai Khao Soi and as Royal Duck Khao Soi with roasted duck. Isan and Lao cooking show up in larb with toasted rice powder, Nam Tok beef salad marinated in tamarind and lime and green papaya salad. Southern Thailand is represented by Phuket Fish, breaded tilapia in a sweet and sour sauce with pineapple and fresh ginger. Bangkok-style street cooking accounts for the stir-fry and noodle sections, including Pad Gra Pao and Pad Pong Ka Rhee Seafood, a curry powder stir-fry of shrimp, scallops and mussels.

Duck is a recurring thread. Four dishes on the menu are built around roasted or braised duck, including Red Curry with Roasted Duck, Roasted Duck Drunken Noodles, Duck Noodle Soup and Royal Duck Khao Soi, and duck is available as a protein choice across the noodle, curry, entree and fried rice sections. Other dishes reach outside the standard Thai-American lineup, among them Kabocha Squash Tempura, Avocado Green Curry and Cashew Nut Paradise with fresh mango. Every dish can be prepared to a requested spice level, tofu is available as a protein substitute across most sections, and a three-item kids menu covers Pad See Ew, Pad Thai and fried rice.

The bar program was built on the same regional logic. Nine cocktails use house-made syrups, including a Tamarind Old Fashioned with cardamom bitters, a Bangkok Gin and Tonic with lemongrass ginger syrup and a Thai Margarita finished with Thai basil and pineapple juice. Thai beer, wine, sake and plum wine round out the list, alongside Thai iced tea, Thai iced coffee and boba options.

“Sharing Thai food is how we share Thai culture,” said Lilly Boonyapapong, co-owner. “We want a guest who has only ordered Pad Thai to leave having tried something from a region of Thailand they had never eaten from before.”
